ITINERARY

Slovenia is one of Europe's most geographically diverse regions - it also happens to be home to Cultisan's European HQ. Alpine mountains, an Adriatic Mediterranean style coast, wine regions reminiscent of Tuscany, rolling hills and forests, expansive flatlands - all of it compressed into a country around the size of Wales. It is impossible to capture Slovenia in a single travel adventure, even in 7 days, so we've focussed on Slovenia's South West regions from the capital city Ljubljana towards the Adriatic coast. We will, in time, be offering multiple experiences in Slovenia because quite frankly it deserves it.

Thursday

Overnight: Ljubljana

Arrive at Ljubljana International Airport (LJU). Meet your private English-speaking driver outside customs and head to Slovenia’s capital, Ljubljana. Guided walking tour of the city. Kick off the tour by sitting down a young chef at his home in the old town for a private dinner. Learn about his family’s traditions, produce their family farm grows as you enjoy degustations paired w/their wines.  

Friday

Overnight: Ljubljana

Morning excursion to a small village outside of Ljubljana for a cheese tasting at a local farm.  Meet with an amazing chef at his Michelin recognised restaurant to learn more about sustainability and enjoy a light lunch there. Afternoon back in Ljubljana at your leisure to explore and enjoy the city’s Odprta kuhna (open kitchen), an open-air food market which brings together over 50 of Slovenia’s best eateries from all over the country. If you’d to get a table at two of Ljubljana’s best restaurants, Tabar and Atelje, let us know as all Cultisan guests enjoy a complimentary glass of natural wine.

Saturday

Overnight: Vipava Valley

Check out of our Ljubljana hotel and arrive into the Vipava Valley, one of 4 micro wine regions in western Slovenia. The strong wind known as burja can blow up to 175 km an hour, adding an additional challenge to winemaking here. Get the whole picture of winemaking in this valley alongside Slovenian history and geography with a young winemaker. Sample the indigenous white wines of Vipava (Pinela, Zelen and Malvazija). Private lunch at a farmhouse in a small Vipava village, which feels almost like an open-air museum, where all the stone houses are built with the purpose of keeping out that strong burja wind. A bowl of jota, a quintessential Slovenian thick soup from sauerkraut and beans, along with homemade goodies from their family’s kitchen such as frtalja, a dish from eggs with seasonal herbs and veggies or sometimes with prosciutto. Check into boutique hotel tucked away in a pine forest. Dinner at organic farm perched high above the valley. Tour their cheese cave, an abandoned Italian bunker from post World War One, sample a bit of their aged, herbed cheeses before a dinner of roasted venison and lamb.

Sunday

Overnight: Vipava Valley

A day to delve deep into skin contact wines (also known as orange or amber wines). Along the way, we discover the history of one wine region now split between two countries Brda (Slovenia) and Collio (Italy).  Meet with a Slovenian family on the Italian side that kick-started the whole amber revolution nearly 30 years ago by pioneering the movement towards both natural and skin-contact wines. Tuck into a five-course lunch paired with wines from a family that uses the traditional Georgian method of wine storage in amphoras known as qvevri.  Walk off all this deliciousness in the charming but relatively undiscovered Italian town of Cividale, founded by a certain Julius Caesar in 50 BC. Finish a day of blurring borders with a dinner that brings together flavours and specialities from the Karst, Italian Friuli and the Austro-Hungarian Empire - at family-run restaurant in Italy. 

Monday

Overnight: Karst Region

Check out of our lodgings in Vipava and head over the hills into the Karst region. Spend the afternoon getting acquainted with its quintessential products. Karst’s Teran wine is grown on terra rossa, a red soil that is rich in iron and limestone. Then there’s pršut (prosciutto) which is always air-dried and never smoked. Even the honey from here is special, having its own designation of origin, similar to most wine appellations. Pay a visit to a local pršut maker at a beautiful hill town built entirely out of stone. Slice your own prosciutto (you choose the thickness) with an old fashion hand-cranked slicer! Then explore the local wines of Teran and Vitovska with a family winery committed to natural wines through sustainable and biodynamic principles. Check into our boutique hotel in a small village. Sample more local wines and hearty regional dishes at dinner.

Tuesday

Overnight: Karst Region

We head off to the Istria region to tour an organic olive farm which makes olive oil and other products while maintaining BIO standards. Learn the techniques of tasting and recognizing distinct properties of the oil. An outdoor lunch follows with all local products including olives, oil, speciality salts. Enjoy the view to nearby Sečovlje salt flats where the Venetians started collected salt from the Adriatic nearly 600 years ago. Then get the scoop on how to make wines according to biodynamic principles while sampling the local refošk red wine. Late afternoon to get lost in the maze of Piran’s narrow streets or sip a coffee and people-watch along Tartini Square. Relax, unwind and choose your own dining spot in this Venetian coastal town wedged along the Adriatic.

Wednesday

Overnight: Karst Region

Spend the entire day with the head of Slow Food for western Slovenia. Tour their Mediterranean herb garden and discover innovative culinary experiences at their home. Enjoy a wide variety of tastings from their farm and in cooperation with many small producers and farmers from all over Slovenia, whether its sourced cheese from the Soca valley or chilis and spices brought from their winter residence in Sri Lanka.. Sample local cheeses, vegetables, fruit, grapes, olives, honey and even The pairings of cheeses with their specially-made jellies infused with herbs and wine is something special. Farewell dinner here with their own wines to cap our week!

Thursday

End the tour and transfer to Ljubljana airport.

If cancelled up to 30 days prior to the scheduled commencement of the program, 50% will be refunded; If cancellation is the result of COVID restrictions - proof required - a 100% credit will be provided or 80% can be refunded.

If cancelled later or in case of no-show no refund will be provided.
